Quick and Easy Chicken Satay

This is a delicious recipe which comes together very quickly and is sure to become a family favourite. We’ve used chicken mince but you can use any quick cook protein and still get the same great flavour.

Ingredients

To serve:

  • ¼ c peanuts, lightly roasted and finely chopped
  • Roughly chopped fresh coriander leaves
  • Rice or noodles

Method

  1. Heat oil in a large pan over medium heat and add garlic. Cook for a minute or until it turns golden.
  2. Add chicken mince and cook for a couple of minutes, breaking it up as you go, until it mostly changes from pink to white.
  3. Add red curry paste, curry powder and tamari. Cook for a further minute.
  4. Add chicken stock, and simmer for a minute or two.
  5. Add coconut milk, peanut butter and vinegar, and mix well to dissolve the peanut butter.
  6. Add greens, and cook in the sauces for 30 seconds or until wilted.
  7. Take off the heat and sprinkle with coriander and peanuts and serve on rice or noodles.
